But I'm surprised there isn't a little sugar to feed the yeast. It must be getting it's meal from the flour.

Interesting, I had to google those, looks like they also have egg and honey in them. Oh I forgot to mention the sugar, I do throw in a tiny bit for the yeast, but it is not necessary, my mom doesn't use that trick and her's are always just as good or better than mine.
