ZINGY POPSICLE GOODNESS ... GET INVOLVED :)

Summer is nearly here again its only a matter of months and we will be back basting ourselves rotisserie style on Perth’s awesome beaches. Factor 30 splashed on and a pair of extra small budgie smugglers we will be back “living the dream” whatever that means …!

With the mercury slowly creeping up each day I felt inspired to make something so refreshing, ice cold and with a lot of zinnng! These ice pops or icey poles as you Aussies like to call them are so easy to make with just a few simple ingredients. The combination of strawberries, honey and lime, layered with pineapple mixed with apple juice and a blueberry yogurt tip will have you going back in and out of the freezer until the snot freezes to your frost bitten face. 🙂

So in a saucepan add about two punnets of strawberries and pop the lid on. Turn the heat to about medium, you want to sweat the strawberries turning them soft. Add a table spoon of honey.(I sourced mine from a local bee keeper in Bunbury https://nudehoney.com.au/ on a road trip down south.I got a 1kg of delicious Karri honey) then squeeze in the juice of a full lime and a pinch of salt. Grab your masher and get mashing this mixture until it turns to a liquid texture but keeps a little bit of plumpness or body. You could use the blender for this also.

In a blender chuck in about a quarter of chopped up pineapple chunks and add some fresh apple juice..Easy as… Turn it to full whack and voile 🙂

Now just add about a table spoon of whatever yogurt you like into the ends of the paddle pop moulds then pour in the blended pineapples and top off with the delicious zinngy strawberry mixture.


Once the moulds are full cover with the lid and place your Popsicle sticks in nice and slow. Place them carefully into the freezer and in the morning you will be driving down the Mitchell freeway shovelling one of these beauts into your gob for breakfast. That is the beauty of these home made Popsicle’s you can have them any time of the day and not feel guilty about it. They are also so versatile that you can vary the combinations to whatever lights up your taste buds. I just pick seasonal fruits on sale at my local farmers markets which keep’s the cost low. Adding lime to any fruit and balancing it with sweet honey is a winning combination of sweet and sour for any mixture.

2 x Plummets of Strawberries
1 x Juice of lime
1 x tablespoon of honey
1/2 x Pineapple
1 x cup of apple juice
250g x fresh blueberry yogurt
