BELL PEPPER CHICKEN SALAD LETTUCE WRAPS ( LOW CARB & GLUTEN FREE )
How about some lettuce wraps on this fantastic Saturday?!
I love salads, because normally they are so easy. Just chop everything and throw it together. You can almost add anything you want to a salad and it still tastes good. For example, this salad, I just opened the fridge and looked around for what fresh ingredients I had available. A lot of people have a basic chicken salad recipe that is their 'go to' but I like to change things up a bit, every time.
Obviously, you could serve this with crackers or on bread, but if you are trying to eat low carbs, lettuce is perfect.
RECIPE
Ingredients
3.5 cups cooked chicken, chopped
2 red bell peppers, chopped
1 onion, chopped (red onion works great here)
1 apple, peeled and chopped (go for a sweet apple like a pink lady)
2 dill pickles, chopped
1/2 cup peanuts, roughly chopped
2 cups mayonnaise
1 teaspoon paprika
1 teaspoon garlic powder
1 head iceberg lettuce, washed and dried (for wraps)
Instructions
Combine all ingredients except lettuce in large mixing bowl and stir very well. Spoon onto large lettuce leaves and serve immediately.
