Tortang Talong

    Tortang talong is a type of or eggplant omelet soaked in beaten eggs with ground black pepper and salt to taste. Some mix it with flour but I prefer mine without it. Cooking tortang talong here in UAE before was quite difficult because it requires grilling. To some, they boil it first but I want my tortang talong cooked in a traditional way, that is grilled not boiled. Good thing, ​simply putting it in a gas stove and fire it works. This is best eaten with steamed rice and dip in banana ketchup.

    Eggplant is good for digestion because it is a great source of dietary fiber. It is also a great source of antioxidants which help the defense a variety of diseases. It also reduce the bad cholesterol of the body and stimulate the uptake of good ones.

    I usually start my procedure but cutting the eggplants into half leaving the base of the stem uncut. In this way, I can see the inside part free of worm. Then I put it the the fire in our gas stove to start grilling. When the skin of the eggplant is wrinkled, I flip the eggplant to another side​ then grill.

When cooking this, I always bring old newspapers or magazines from work which will serve as mat for peeling the skin of the grilled eggplant

Cooking tip: Once the eggplant is grilled try dip it in water. This will make your peeling easier

    This is my first time cooking the tortang talong without using its stem. I guess it is better that frying the eggplant with its stems. When all eggplants were grilled, I sliced it and add the mixture of eggs with salt and black ground pepper. I also add sliced onion for additional flavor. You can actually add grated cheese too.

When the eggplant turns golden brown, your totrtang talong is ready.

    I also made ensaladang talong, a salad dish of Philippine cuisine. It is made of grilled eggplant combined in a mixture of vinegar, sliced onions and tomatoes with salt and pepper to taste.

    This is a budget-friendly​ dish. I bought​ eggplant for 15.00 AED (4.00 USD) 10.00 AED per kg. I bought 1 and a half kg to feed hungry tummies and​ half​ dozen of eggs which cost 5.00 AED (1.40USD).
