Our Pancake Recipe to Keep You Happy During Quarantine

Pancakes Anytime!

Who loves to have breakfast food for dinner? I know I do! It's like a perfect little life hack packed with comfort food options. I've found that I've been doing breakfast items for dinner a lot more now in quarantine, it just feels right you know? And most times they are easier to prepare. I got another recipe today for you guys for quick and easy homemade pancakes! These have that old timey rustic feel and not your artificial ol' factory made pancakes. I made mine with some vanilla for flavouring but these work beautifully with chocolate chips or your favourite berries. Heck you could even put a dash of cinnamon in there and it'll be heavenly!

Recipe Time

1.5 cups of flour
3 tsp baking powder
A pinch of salt
1.5 tbsp sugar
1.24 cups of milk
3 tbsp butter (melted)
1 large egg

First add all the dry ingredients into a bowl to get acquainted with each other. This would include the flour, salt, baking powder and sugar. Don't be afraid to get a little messy and use your hands to make a well so the wet ingredients have a place to stay. There's something different about the food when you get physically involved without utensils.

Next, add your milk, egg and melted butter into your lovingly made well and mixing in thoroughly until all the ingredients are incorporated. It may take a while for the sugar to dissolve to take your time. Until you get a mixture with the consistency below. If it is not as such you can add more milk or flour to adjust.

Get A Pan!

Time for the cooking process! To get perfectly round pancakes all you have to do is ensure that the pan is heated sufficiently and use a scoop or in my case, a 1/4 cup measuring cup to pour the batter into the pan. You can can also fill the batter into a piping bag and so on but that takes too much time for me.

You guys probably know the drill by now, all you have to do is wait until you see air bubbles being formed at the top of the pancake batter and that's how you know it's ready to flip. Once flipped, it won't take long for the other side to brown up nicely so be sure to keep checking it!

I love pancakes that have a nice crust on the outside and delicious soft insides, this is just perfect!

Let me tell you, this not only looks heavenly, it tastes heavenly! There's that perfect crispy yet tender exterior crust on the first bite, followed by this lovely moist and fluffy inside that leaves you wanting more. Store bought pancake mix has nothing on this. Whether you decide to eat this for breakfast, lunch or dinner, it's going to feel like its perfect for the occasion, no doubt. No wonder I've been putting on weight for the quarantine!
