THIS IS WHAT HAPPENS WHEN YOU CANNOT WAIT FOR THE CINNAMON DOUGH ROLLS TO RISE.

I intentionally skipped the second rising of the dough. Now we know why dough rising should be done twice.   

YEAST MIXTURE (mix and set aside)

1/3 cup warm water

2 ½ tsp active dry yeast

¼ teaspoon sugar


DOUGH MIXTURE INGREDIENT

In addition to the above mentioned ingredients:

 ½ tsp vanilla extract

1 tsp salt

1 tsp baking powder


PROCEDURES

1. In a large bowl, mix and combine well the yeast mixture, milk, sugar, butter, vanilla and eggs.

2. Add in the salt and baking powder.

3. Gradually mix in the flour.

4. Place the dough on a lightly greased bowl, cover with plastic wrap and place the bowl in a warm location.

5. Let the dough rise of an hour.

6. Punch the dough for few times to release the air.

7. On a floured surface, knead the dough gently then flattened it for it for about ¼ inch thickness.

8. Brush the flattened dough with the butter then sprinkle it with the sugar and cinnamon powder.

9. Roll up the dough then slice them.

10. Place the rolls in a lightly greased baking pan.

11. Cover with plastic wrap and let it rise for another 1 hour. – THIS IS THE PART WHERE I SKIPPED AND DID NOT WANT TO WAIT.

12. Preheat oven for 350F or 180C.

13. Bake for 15 – 20 minutes or until sides of the cinnamon rolls are lightly golden.

14. While the rolls are cooking, prepare the glaze by mixing ¼ cup milk with powdered sugar.

15. When cinnamon rolls are done, let them cool for 3 minutes then spread the glaze. Then serve. 

Have you noticed the sides of the rolls? After all the cinnamon is still very delicious, soft in the inside but the crust is little bit hard due to skipping the second rise. But my children and I still devoured them until nothing left.

Too much flour? I doubt that second rising affected the end result that much. I don't think it would result in a "crust"... But nice buns :)

Now that you've mentioned about the flour, maybe it was the flour 'coz i added more than a cup of flour during the kneading 'coz it was too soft, sticky and didn't take a form. I thought all along, it was due to my skipping of the second rising. Thank you.
