What Is Elubo Made Of And Also Types Of Elubo ?

Àmàlà is a Nigerian food made out of yam and/or cassava flour. Yams are peeled, sliced, cleaned, dried and then blended into a flour, also called elubo. Yams are white in colour but turn brown when dried; this gives àmàlà its colour. Àmàlà is from Western Africa and eaten mostly by the Yoruba people in Nigeria.

This particular one is made from Cassava tuber. This is how it is been made out of the fresh tuber.

After the Cassava tuber might have been harvested raw, you will peel it , wash it and also soak it for three days . When it feel soften you use Seive and squeeze some amount of those soften portion the leave the other as Shaft. Sundry the shaft for grinding.

Elubo is the Yoruba word for yam flour made by cutting yam into small bits, dried and then ground into smooth brown flour. ... The other type is made from the skin or peelings of the yam or cassava or cocoyam but not plantain, which is sun dried into a crispy consistency and then grind into powdery form.

How To Make Dried Elubo Into Flour

Here is a picture that shows how this is done manually with grinding machine in the Main Market in Ipata. Ilorin. I went to the market to source for this dried Elubo to grind in and make it into flour , I know to so many people it is unbelievable but it's true and real.

This is how it looks from the source when it is dried. You can never dry it at room temperature it will go bad or spoilt. So you have to sun-dry it to make it done within a short period of time. 3 (days)

This section of the grinding is base on the fact that the woman in charge used two different grinding machine. One is used for breaking it into Smaller pieces within short period of time. While the second one grinds it into flour at the same time. All this was done within 15 minutes.

After the whole grinding Process was done. She had to bagged it with transparent Nylon for me.
