very Italian of you to make use of egg yolks instead of heavy cream. The 3 kinds of mushroom indeed gives it an extra woodsy flavor but agree that ham gives carbonara its distinct taste.
Haha, the base of the recipe is Jamie Oliver's so the egg yolks were his idea. More mushrooms at least makes it so that it won't just have a singular mushroom taste (even if the benefit is minimal)
