ChocoHemp Protein Balls
Here is the new and improved recipe! These are so much fun to make with your children and a great way to incorporate math into homeschooling. This would make a special after school treat or a dessert after a special dinner. They can be boxed and given as gifts too! Keep refrigerated in a sealed container. Go ahead and try these and let me know what you think.
Ingredients
6-8 Medjool dates
2 tbsp of honey or maple syrup
½ cup of shredded coconut (optional)
1/3 cup of hempseeds
½ cup of almond meal flour
2 tbsp of cocoa powder
1 tsp of vanilla extract
1 tsp of cinnamon
1/8 tsp coarse sea salt
Chocolate dusting - mix 1 Tb of cocoa powder, 1 table spoon coconut sugar, cinnamon (if you wish to skip the ganache step then add your sea salt and roasted almonds)

In a double boiler melt 1/3 cup of semisweet organic chocolate (Look for soy lecithin free but sunflower lecithin is ok. and sweeten with Stevia is best)
Final Touch - mix ¼ cup of hempseeds or crushed roasted almonds and 1/8 tsp coarse sea salt
Directions
• In your food processor, add your coconut shreds, almond meal flour, and cocoa powder. Blend.
• Add your dates, vanilla extract and blend.
• Add honey/maple syrup and mix until you have a soft and gooey consistency. Fold in the hemp seeds.
• Make your dough into 1" balls and roll them in your chocolate dusting. Refrigerate for 15 min.
• Dip your rolled balls into the chocolate ganache and sprinkle with the 'Final Touch' mixture. Refrigerate for 30 min until the chocolate ganache has set.
