Ingredients
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda

1 ripe banana, mashed
3/4 cup milk
1 egg
2 tablespoons melted butter or vegetable oil
Optional toppings: sliced bananas, maple syrup, chopped nuts, or whipped cream
Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, mash the ripe banana until smooth. Add the milk, egg, and melted butter or oil to the mashed banana and whisk until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
Pour 1/4 cup of the pancake batter onto the skillet for each pancake. You can make them larger or smaller depending on your preference.
Cook the pancakes for 2-3 minutes, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
Remove the pancakes from the skillet and keep them warm. Repeat the process with the remaining batter.
Serve the banana pancakes warm with your favorite toppings, such as sliced bananas, maple syrup, chopped nuts, or whipped cream.
