Homemade Beetroot Soup [Recipe and Photos]
I have a glut of Beetroot at the moment so thought I'd make some Beetroot Soup.
Never made before, no idea how it's meant to taste!
Recipe
First top and bottom some lovely homegrown Beetroot. But shop bought will do if you don't have any Growing =D
Cover with some oil and roast for around 45 minutes or till slightly soft.
I used Gas Mark 7 about 200C.
Next in a pan soften some onions and leeks for around 5 minutes.
Then add some stock I used vegetable stock probably about a pint and a half.
Then I let this book for 10 minutes untill the Beetroot had softened.
From the pan into the blender. Season with Salt and Pepper and blitz!

That looks really good. I have no idea why people only ever pickle beetroot
Thank you, I must admit though it didnt taste very nice! I should have followed a receipe it was very earthy.
I like cooking beetroot with tomatoes and onions, carrots are also a good addition and adding oil also improves the taste
