Cheese Bread (Yucca/Cassava/Tapioca) @senseicat

One of my best friends is from Ecuador and she shared her family recipe with me. I guess there are many different variations including the ones that are served at the Brazilian steakhouse hence the various names at the top depending on the flour you prefer.

Step 1:

Boil 1 cup of water
1 1/2 cup milk
1 cup of oil (vegetable)
1 1/2 TBSP. salt

Turn off as soon as it boils.

Step 2:

Add 2 packs of 20 ounces of tapioca flour (use your hands to break apart 5-10 minutes).

Add 6 1/2 cups mozzarella cheese (mix with hands and no lumps (5-10 minutes).

Add eggs 6-7 (one at a time slowly and knead).

Roll into balls (large Tablespoon size).

Place on tin foil and place on baking sheet.

Bake 15 minutes at 350 degrees to serve immediately.

If you freeze the remaining portion, it will take a little longer to bake, but still delicious!

looks really tempting, here in Venezuela this bread is also known as pandebono, typical from our neighbors Colombia

Simple but delicious for an afternoon with coffee, but you should try the Casabe is crispy flat bread made from yuca.

I love Cassava/Yucca/Tapioca! They do some amazing things with it in Brazil! Has anyone ever had those giant crepes they make with it, filled with cheese, butter or nutella? They are soo yummy! It's amazing it's gluten free
