Anyone Can Cook: Granola!
We've been moving this week, and as it happens with moving we found ourselves with a kitchen full of supplies but no real food.
So I made granola!
This granola is a staple in our pantry, as we eat it for breakfasts and snacks often. You can make it with a variety of nuts and fruit. I find blueberry almond to be the best, but today we only had goji berries.
Granola:
2 cups rolled oats
1/2 cup dried fruit
1 cup nuts
1 pinch salt
1/8 cup honey
1/8 cup coconut oil
1 teaspoon vanilla
Optional: teaspoon of spice
Mix together your dry ingredients, oats, fruit, nuts and salt. In a separate bowl, mix together your wet ingredients.
Finally, in a third bowl, combine wet and dry ingredients, mix well so that the dry ingredients are completely coated.
Once everything is mixed, spread into a baking sheet and pop it in the oven at 350 degrees Fahrenheit. You'll want to bake your granola until its golden brown. Stir occasionally to make sure the edges don't over brown. I check mine every 10-15 minutes. It should take 20-30 minutes depending on your oven.
Remove from oven, let cool and place in an airtight container. I like using mason jars because they're cheap and easy to find. This recipe makes 1 quart jar plus a little extra.
Voila! Quick and healthy snack/breakfast.
