Sunday Lunch - Burritos And Story

Sunday Bbbbbuurrritoooss!! Our lunch today was Burritos! This is one of our favorites! Yummy, crispy, cheesy buritos. My husband can make it really good. He's an expert:) me too but with eating lols. Yesterday, we went to the local supermarket and bought the ingredients that we need to cook for Sunday. Burritos, it's like tacos but rolled like lumpia, with different herbs and filling inside.

Homemade Burritos

Here are the ingredients:
Burritos
vegetarian meat
sweet corn
beans
olives
pickles
cheese
salt, pepper (red and black)
tomato sauce
oregano
cumin
lime

Steps:
Soak the beans overnight. Boil it for 30-45 minutes until soft.
Heat the pan. Put olive oil.
Sautee the vegetarian meat
Add the beans, pickles etc.
Put tomato sauce
Season with salt, peppers
Beans

Buritos is similar in  wrapping eggrolls or banitsa
Place the wraps
Add the cooked ingredients together
Roll it. Put cheese on top
Place it in the oven 20-30 minutes until the cheese is melting or brown.
Lastly, serve it with LOVE.

Half of it had no cheese. My son and I eat cheese. So the half was ours:) While we were eating my husband told me a story. It's about a Greek guy, living in US for many years. He was diagnosed with lung cancer. After knowing this, he consulted doctors not only 1 but 6 doctors for second opinion. Everybody said the same thing. He had only 6 months to live. His family was devastated with the news. They decided to go back to Greece because the funeral was so expensive in US.  

They lived in one of the islands in Greece. He wanted to die in his own land. This greek guy was ready to die any moment. He laid down in bed and after 6 months he was still living, 9 months passed he was still breathing. So, he decided to go outside the garden, he plants and harvest his own fruits and eat olives everyday and use olive oil for cooking. He also started to drink wine from the local shop. "I'm gonna die anyway, so why not enjoy my life now" Days, months and years have passed, without knowing it, he enjoyed being outside and continue to do his old routine. One day, he wanted to consult his doctors in US. But they were all dead. He was surprised after hearing the news. To make the story short. This Greek guy lived up to 102 years.

What a beautiful story indeed. I said to my husband "Oh , is that the reason now why you are drinking wine? ( he don't really drink alcohol, once in a blue moon) He replied " No, we are having burritos, it's a good combination" Yeah yeah. You will be sleepy right away because you are not used to it.

This was our simple lunch and I enjoyed his story. I asked him where he read it. He said from the Bulgarian news site. After lunch we relaxed for a while and I saw him knocked out from the one glass of wine lols. He is always telling me to move, exercise and sweat. It's a combination of healthy eating,  mind, healthy environment and to have balance in everyting that I do.

Wow, thank you for all this. It looks very delicious. I felt very hungry when I saw the pictures. I'll give the recipe to my wife so she can bring it to us for lunch.

he lived for so long and it must be because of the olives he planted! hahaha i dont like olives that much though 😂send some burritos over sis! hha 😘
