Homemade Cream of Mushroom Soup Recipe
It is so easy to make your own homemade cream of mushroom soup. This is an easy, hearty and earthy homemade cream of mushroom soup that can be served as an appetizer, lunch or dinner. You can also use this cream of mushroom soup with cooking chicken / pork or even in casseroles.. This recipe has loads of mushrooms and mushroom flavor. VIDEO RECIPE below. Enjoy.
Homemade Cream of Mushroom Soup Recipe
INGREDIENTS:
4 cups sliced mushrooms - Cremini or Button
1 medium diced onion
2 stalks diced celery
6 cups vegetable or chicken broth
1 cup heavy cream
2-3 cloves minced garlic
sprigs of thyme or 1/4 tsp dried thyme
salt and black pepper to taste
2 tbsp. flour
1 tbsp. butter
1 tbsp. olive oil
In a large pan on medium heat add butter and olive oil. Let butter melt.
Add onions and celery. Cook and stir for 3-4 minutes.
Add mushrooms and garlic. Cook and stir for 10-15 minutes. Let a little liquid on the bottom.
Add flour, cook and stir for 1 minute.
Add broth a little at a time. Turn heat up to medium high and bring soup up to a simmer. Add thyme, salt and black pepper to taste. Simmer for 15-20 minutes.
Take out half or 3/4 of soup and blend until smooth. Add back into pan.
Add cream and cook for 3-5 more minutes.
Enjoy.

I love soups of all kinds. That looks good!
Gosh, that looks yummy. I wonder if it's possible to replace the heavy cream with plant milk -- maybe with a little cornstarch to thicken it. I'm sure the butter could be replaced with margarine. I might experiment. Now I want mushroom soup.
