So I've had the most wonderful time making this beautiful Falafel Sandwich.

If you've never had Falafel before you're definitely missing out. They are these little balls of vegetables that are fried or baked in what generally is in meatball form.

These Falafels are actually store bought so I don't have a recipe for you.

I actually haven't had much luck in creating my own Falafel's. The last couple of times I tried to make them they were too loose and fell apart.

The main ingredients in a Falafel are Chickpeas, parsley, onion, garlic, flour, and cumin.

When I made this I was actually feeling a little down that day. The fresh Cherry tomatoes, spinach and drizzled vegan caesar dressing all came together in a bright cacophony of flavors that sang on my tongue.

Often Falafel's are used in a Pita stuffed with a bunch of other vegetables. I didn't happen to have any Pita bread on hand so I ended up using french bread instead.

I definitely suggest trying this out.
