Mango Cheesecake Balls
Hi There Steem Community,
It's been a while since my last post unfortunately. Time has been a bit limited for me these days which has meant less and less minutes for screen time. Also, easy and quick to make meals which are, to be honest, my favorites ever.
With that in mind, I finally got a bit of time to share a bliss balls recipe I really like. I hope you will too!
Time: 15 min (+ fridge set) | Servings: 16 balls
Ingredients:
- 1 small mango peeled and seeded (approx 110g; frozen fruit can be used too)
- 125 grams firm light cream cheese (from a block)
- 1 tbsp honey
- 1 cup desiccated coconut + extra for rolling
- 2 tsp melted coconut oil
Instructions:
- Mix the cream cheese and mango in a food processor and blend until smooth and creamy.
- Add coconut, honey and coconut oil and blend until well combined.
- Place mixture in the fridge for about 20 minutes to firm up.
- Form into balls and roll them in the coconut and place in an airtight container.
- Place in the fridge or freezer to set.
