LOVE soup

This first post is about how to make healthy, quick and easy soup. You will become a happy cook, in good shape, lean and healthy.

First: With or without meat. With or without noodles. I enjoy booth in the same bowl.

A) Personally I enjoy a little maety bone to start the broth... Could be some chicken legs or some beef marrow bones with a little meat around it. It could be the carcass of some left over chicken or turkey. Your choice will be your soup.

B) I try to avoid wheat noodles and gluten stuff. I use rice noodle sticks ( quick and easy to cook)

C) Vegetables are surely a must ( I use frozen corn kernels, frozen green peas, frozen green beans, and fresh garden grown leaves like baby kale and mustard greens ( they are very easy to grow) or any cabbage family type of greens, some are sweet others are bitter... I enjoy both.

D) Flavour... Most important... Onions, garlic, chives, green onions, cloves, star anis seeds, cinnamon, cayenne pepper, pepper corns, curry powder, tum yum soup base, miso soup base, and what ever turns you on.

E) Salt: pink Himalaya salt or sea salt.

F) Oil: coconut oil, sesame oil,

G) Water: I use filtered water.

THEN YOU ARE READY TO GO.

  1. Chicken leg soup with rice noodles for one.
  • 2 chicken drum sticks,

  • one half of a big yellow onion or a whole small one coarsely chopped,

  • two pieces of garlic finely chopped,

  • one full tea spoon of tum yum soup base

  • onefull tea spoon of miso soup base

  • 3 cloves, one star anis seed,

  • one heavy pinch of cinnamon

  • one pinch of cayenne pepper powder ( only if you like hot food)

  • rice noodles ( put as much as you can eat)

  • Veggies is up to you... ( a bit of this and a bit of that... corn kernels, green peas or leave greens)

READY... GET SET... GO.

First cook the noodles ( rice noodle stickS cook very quickly, dont over do it) rince the noodles in cold water to get rid of the starch and put aside for later.

2 : heat up ( low) coconut oil ( tea spoon ) and ad the onions and the garlic ( dont burn ) when the onions are getting soft, ad the cinnamon and stir, then ad water ( two cups) and the chicken legs ( make sure you cut the meat out of the bone so the bone will get well cooked and will give all its goodness to the broth)

3 : Let the mixture boil ( low heat in a covered vessel) until the meat and the bones are cooked. Ad the frozen veggies half way...

4 : Ad the tum yum and miso paste to the broth and simmer ( do not boil to keep the miso alive)

5 : Time to taste the soup... dont burn your tongue... and ad the fresh greens in the mixture.

6: time to put the noodles... enough for your stomach but not to much to soak all the broth.

7 : Voilà... Put all the soup in a large bowl and enjoy with a large spoon and a fork ( for the noodles)
