Old Fashioned Beetroot & Chocolate Cake Recipe

Vegetables in cake? Absolutely! If you like carrot cake or zucchini bread you'll love this lovely, rich beetroot and chocolate cake. It's extremely moist and impossible to resist. Rest assured, it tastes nothing like beets so no one will be complaining about the fact that you've put veggies in cake - I promise you!

If you happen to preserve beets, this recipe is a perfect way to use up your canned beets.

Ingredients

  • 2 cups - cooked beets - puréed
  • 2 cups - unbleached all purpose flour
  • 3/4 cups - chocolate chips
  • 3/4 cup - butter - melted
  • 1/4 cup - dark brown sugar
  • 1/4 cup granulated Sugar
  • 3 large eggs
  • 2tbsp cocoa powder
  • 2tsp baking powder
  • 1tsp vanilla

Directions

  • Pre heat the oven to 350F (177C) & Grease a 9 inch cake tin.

  • In a large bowl add flour, baking powder & cocoa powder

  • In a medium bowl combine the melted butter, vanilla and sugar. Stir well. whisk in the eggs one at a time.

  • Purée the beetroot and add it to the egg mixture.

  • Pour the wet mixture into the flour mixture and stir until combined. Stir in the chocolate chips.

  • Pour into the greased cake tin

  • Bake in preheated oven for 35-40 minutes or until a toothpick inserted into the centre comes out clean.

  • Allow the cake to cool for a few minutes before removing to a cooling rack.

It's a really versatile cake. Serve with custard, ice cream, vanilla icing or a fruit compote. You might also enjoy it with rumtopf: Fruit Preserved in Rum

It really is very easy. I am not a gourmet baker, simple is best! I'm going to have to go for an extra long walk tomorrow. I've eaten more than once piece today :)

That happens to me with all my baking too.. I'm not great at self control when sweets are around!

He already has accepted Zucchini Crisp into the yearly rotation. I simply replaced Apples in the Crisp recipe with Zuchinni, he didn't even notice!

I have a reputation for sneaking veggies into people. I "fibbed" to my son when he was little and told him peas were candy. He sure loved peas! When he learned the truth years later he was so mad!

Wish my kids would fall for that! but NOPE :)

ha! He still holds a grudge so it probably wasn't the best idea. I'm lucky that he loves veggies. He will sit and eat a whole cauliflower raw. I had a friend who's kids refused to eat any and all vegetables, for years! Just meat and bread. Can you imagine?

...unless you count spaghetti and pizza sauces, and cucumbers, as eating vegetables.

Little Man will at least eat stuff like mashed potatoes and corn on the cob. But green veggies are a battle royal with both kids. I've finally gotten them to at least TRY a green bean--and Pixie will only eat one if she can dip it in ranch dressing. sigh.

oh my, haha. Kids are so funny. Does it help if I tell you this phase will pass (somewhat)? Our son was made to try everything at least once. Three bites. It caused a lot of miserable dinner times!

I lol'd at "somewhat" :) It does help, plus I remember how picky my brother and I were as kids and now we eat all kinds of things. We've implemented the "you have to at least try it" rule and oh yes there have been some miserable dinner times here too. Amazingly, tonight they ate the obligatory bite without a battle. I haven't worked them up to three yet!

My son is 22 and still picks out all traces of mushrooms and peppers before he eats. (lol).

I have never tasted a chocolate cake with beetroot in it, but the result seems delicious! Your recipe is very interesting, I'll try it, thank you for sharing.
