Feta Frittata's With Mini Tomato Recipe

Frittata's
60 g Semi-dried tomatoes
2 cloves garlic
1 brown onion, halved
20 g olive oil
80 g sour cream
7 eggs
100 g feta cheese, crumbled
sour cream, to serve
6-8 cherry tomatoes, quartered, to serve
fresh dill, finely sliced, to serve
RECIPE'S PREPARATION
1.
Preheat oven to 180 degrees.
Oil or grease mini muffin tray.
Add semi-dried tomatoes to TM Bowl and pulse 2 times for 2-3 sec/Closed lid/turbo, set aside.
Without washing the bowl, add garlic and onion, chop 3 sec/speed 7, scrape down sides.
Add olive oil and saute 2 min/100 degrees/speed 1.
Add semi-dried tomatoes, 80g sour cream, 7 eggs, feta cheese and season with salt and pepper. Combine 10 sec/ counter-clockwise operation/speed 4-5.
Spoon mixture into muffin tins until almost full.
Bake in oven 13-15 mins until puffed and golden. Cool 5 mins then turn onto wire rack to cool.

Once cool, top each with a small teaspoon dollop of sour cream, a quarter of a cherry tomato and sprinkle with chives.
