What I had for Lunch
It's no new thing that most persons due to time constraints often skip breakfast but they always find a way to balance it up eating in the early hours of the afternoon.
Today was one of those days for me because I had to rush out in other to meet up with work.
This afternoon I had a simple meal,
Fried plantains with fried egg.
This is a popular meal in most Nigerian homes.
INGREDIENTS NEEDED:
- Ripe plantain
- Egg
- A pinch of salt
- Butter or vegetable oil
- Pepper (optional)
- Seasoning of choice
- Onion/ fresh tomatoes.
STEPS FOR PREPARATION OF THE PLANTAIN - Wash and peel your ripe plantain.
- Slice the plantain to desired shape.
- Set your pan on fire and add your vegetable oil allow to heat on low heat for about 1min.
- Add your plantain to the heating oil allow until golden brown and flip to the other side.
- Remove with a spoon and Drain on a paper towel.
STEPS FOR PREPARATION OF THE EGG - Break and beat your eggs.
- Add you pan on fire at low heat
- Oil the pan
- Add tomato/ Onion
- Add a pinch of salt
- Pour in the egg
- Allow to fry for a Minute
- Stir and serve.
