Fruits and Veggies Monday | Fancy Lemon Papaya Bars
Happy Monday my Friends! Here we are gathering again for another great week of Fruits and Vegetables!

Speaking of inspiration...
my grandmother was a huge inspiration to me. From the time I was very young I spent a much of the summer with her. The kitchen was a special place, always something on the stove or in the oven! She had a huge garden in the back and between cooking and canning, we both loved baking together. (Now you see why I love to bake!) She made amazing pies and pastries and when I married she gave me a recipe box filled with her recipes. All were neatly written on recipe index cards. I still have that box and still refer to her recipes! Many I have modified ; substituting flours, sugars and eggs, trying to achieve that perfect healthy Grandmother's recipe.
One of my favorite recipes, Lemon Bars! These bars were tart and sweet, with a light cookie base. Oh were they good, I can taste them now! Well this is one of the recipes I have experimented with. Moving to SW Florida brings so many fruits to try.
I think my grandmother would like this one!
Papaya!
Fancy Lemon Papaya Bars
Tart and Fancy
Foundation
- Almond Flour (1/2 cup)
- Maple Syrup (2 tbsp.)
- Unsweetened Organic Shredded Coconut (1 cup)
- Sea Salt (dash)
- Flax Egg (qty 1)
Fruity Filling
- Fresh Papaya (3/4 cup pureed)
- Maple Syrup (1/3 cup)
- Fresh Lemon Juice (2-3 tbsp.)
- Chia Eggs (qty 2)
I used both flax and chia eggs for this treat! Make both now and let them sit until you’re ready!
Start with a firm...
foundation by mixing all of the foundation ingredients in your favorite bowl. Add the flax egg, stir well and firmly press this coco-nutty mixture into a parchment lined baking dish.
Bake…
at 350 degrees for 10 minutes or until golden brown.
Light and Fluffy…
Filling is next! Start by peeling the Papaya, scooping out the seeds, and chopping into cubes. I pureed enough to make ¾ cup puree and saved the rest for morning juice!
Puree…
the papaya in your blender. It should be silky smooth and fluffy!
Lemon Juice and...
chia egg next! Whisk together the remaining ingredients and pour the filling over the foundation. Bake at 350 degrees for 30 minutes.
Top with Coconut and Voila! Lemon Papaya Fancy Bars!
Lemon and Papaya work so well together! Lemon adds a neat twist to the natural sweet papaya! This is a light healthy fruity treat you will love.

I am a lemon bar fiend, but I don't know too much about papaya. I have an aversion to coconut too, so I might have to modify these if I were to try them out! They look delicious though. If I didn't know what was in them, I would probably snag one and scarf it down!
Your granny sounds so like mine, they came from the era where they would make maximum use of fruits and veggies by canning. I'm amazed at your Lemon Papaya bars, did the fruit flavour change much? Lovely post my friend!

I know, if you're like me I miss her. I wish I could bring back some of those wonderful moments. I can picture baking with her and "working" in the garden. The Lemon really works well with the papaya, lifts the flavor but gives it the nice fresh tart of lemon. I like it. Is this the recipe you were looking for?

Your grandma sounds like an amazing woman. My grandma has the same recipe cards so I know exactly what you’re talking about. Hers are written in neat cursive though… no one ever writes in cursive anymore, I love it. These bars look fantastic. The lemon twist sounds mouthwatering. Goodness gracious I love this Monday family! Of course you all make me salivate every week with delicious entries like this, but the stories that go along with it are just so precious. I think we can all relate to the joy of pulling out a handwritten recipe card, even better when it has stains spattered about it to prove it is well-loved! Thank you for sharing this special memory with us. And of course for sharing this delicious recipe! This has been another week where I wish I had more time to make everything because I want to try all of the entries!
