That's too bad that the batter overpowered everything else. I have been in that situation a lot of times where you want to like it but you just can't do it. I had some perch like that a while ago where I had them fry it in a beer batter as opposed to a regular batter. It was just too much. Especially for something as small as perch. I love that sweet chili sauce though.
