I love to cut the carrots into small pieces and back them at 400 for 30-40 min. They get soft on the inside and they have a bit of a crust if you don't peel them. Get some low fat ranch or ketchup and you have carrot fries that have a sweet flavor like sweet potatoes! Another quick and easy way to prepare them!
