Zuchini noodles
Wash Zucchini
cut off ends,and ribbon with a peeler. Stop on each side when you get to the seeds. discard seeds .
lightly salt in drain in a colander.
Parsley pesto
wash and cut up parsley
2 cloves of garlic
olive oil
pulse in food processer
Rinse Zucchini and pat dry
toss with pesto diced tomatoes, and olives.
