The most delicious spinach ever in 5 mins flat (my Nana's recipe)
Ok everyone kinda cringes just a little when you go to eat spinach. Or at least you used to right?
But all of that can quickly change when you have the most incredible spinach recipe ever....and incredible means the following:
- quick
- easy (anyone can do it / replicable)
- simple
- so delicious you can't stop eating it.
So here goes:
First, to keep with 1-3 above, you will need the following: (don't worry- it's a short list!)
❤ Real EVOO (extra virgin olive oil) such as this one: (80% of it is fake btw..thanks Mobsters)

❤ Organic spinach leaves (whole foods sells them pre-washed and packaged...or go to your Farmers Market)
Hint: If you get the pre-packaged get Earthbound Farms. Organic Girl (sorry) usually SUCKS! Not sure why they keep selling it??
❤ A lemon. Note: The lemon does not have to be organic but wash the outside of the lemon before use with organic soap.
❤ Fresh garlic cloves (try purple garlic for fun)
Note: I use about 4 cloves for one smaller carton of pre-packaged spinach.
❤ Grindable salt & pepper.
I use the duo from Costco as seen here:
❤ A high quality pan such as a cast iron (or non-aluminum pan).
❤ A paring knife
Directions:
-Cut the ends of the garlic and peel.
-Mince the garlic and let it sit about 10 mins (releases the allicillin..you can tell if it looks wet)
-Cover the bottom of the pan with the evoo (use your fingers or a paper towel to cover the entire bottom but don't pour to cover or you'll get too much oil).
-Toss in some of the garlic and the pre-washed leaves
-Turn the heat on medium to medium-low
-Toss the spinach around until its covered
-Once it cooks down a bit, squeeze in lemon to taste (lemon offsets the oxalates in spinach that can leach calcium out of your body)
-Grind in some salt & pepper to taste and continue to toss.
-When done with that, sprinkle in a bit more garlic and cook on low.
-When spinach is bright green and cooked down/ almost done, add in the last bit of garlic minces and turn off heat. Let it sit for 5 mins in the hot pan to wilt the last garlic pieces.
It should look like this:
Then.....MANGE! (eat in Italian).
Spinach goes great with a white fish or salmon, (throw in some mushrooms..yum!) and a great pinot noir or sauvingion blanc! (see below for a great article on which wines go best with salmon).
