I really want to make this, looks super refreshing! I tried making ginger beer many years ago just after we married, but I used fresh yeast and silly me used screw top bottles! Mom came to visit, took one look at this stuff bubbling away, took it outside and slowly started unscrewing the bottles. Of course I lost the whole batch as it all shot out, my whole kitchen would have been soaked, would certainly have hit the ceiling! I was so disappointed and got such a fright, I never tried again. But I will try your method now, looks so delicious and cooling.
