Oyster  mushroom (Pleurotus ostreatus) is a nutritious food ingredient with  high protein content, rich in vitamins and minerals, low in  carbohydrates, fats and calories. This fungus has nutritional content such as vitamins, phosphorus, iron, calcium, carbohydrates, and protein. For  the protein content, quite high, about 10.5-30.4%. The composition and  nutritional content of every 100 grams of oyster mushrooms is 367  calories, 10.5-30.4 percent protein, 56.6 percent carbohydrates, 1, 7-2.2 percent fat, 0.20 mg thiamin, 4.7-4.9 mg riboflavin, 77.2 mg niacin, and 314.0 mg of calcium. The calories contained in this mushroom are 100 kj / 100 grams with 72 percent unsaturated fat. Mushroom fiber is very good for digestion. The fiber content reached 7.4 - 24.6%.
The nutritional content of oyster mushrooms according to the Directorate General of Horticulture Ministry of Agriculture. Protein averages 3.5 to 4% of wet weight. Means twice as high as asparagus and cabbage. If calculated dry weight. Protein content is 10.5-30.4%. Whereas rice is only 7.3%, wheat 13.2%, 39.1% soybean, and cow milk 25.2%. Oyster mushroom also contains 9 kinds of amino acids namely lysine,  methionine, tryptophan, threonin, valine, leucine, isoleucine,  histidine, and phenylalanine.
The results of the study at Massachusett University concluded that  riboflavin, Nicotinic acid, Pantothenat, and biotin (Vitamin B) were  still well preserved even though the mushrooms had been cooked.
The  results of the Beta Glucan Health Center suggest that the oyster  mushroom (Pleurotus ostreatus) contains the Pleuran compound (in Japan,  the oyster mushroom is called Hiratakes as a medicinal mushroom),  contains proteins (19-30 percent), carbohydrates (50-60 percent),  acamino, vit B1  (thiamin), B2 (riboflavin), B3 (Niacin), B5 (panthotenic acid), B7  (biotin), Vit Cdan minerals Calcium, Iron, Mg, Phosphorus, K, P, S, Zn. Can also as antitumor, lower cholesterol, and antioxidants.


72%  Fat in oyster mushrooms are unsaturated fatty acids that are safe to  eat either suffering from excess cholesterol (hypercholesterolemia) or  other lipid metabolism disorders. 28% saturated fatty acids and the presence of a kind of chitin polysaccharide in oyster mushrooms allegedly cause good taste. Oyster  mushrooms also contain important vitamins, especially vitamin B, C and  D. vitamin B1 (thiamine), vitamin B2 (riboflavin), niacin and provitamin  D2 (ergosterol), in oyster mushrooms are quite high. The highest primary minerals are Potassium, Phosphorus, Sodium, Calcium, and Magnesium. The  highest primary minerals are: Zn, Fe, Mn, Mo, Co, Pb The concentrations  of K, P, Na, Ca and Me reach 56-70% of total ash with K content  reaching 45%. Mineral microelement that is metal in oyster needle low content, so this fungus is safe consumed every day.
