Assalamu Alaikum everyone. I hope everyone is well by the grace of Allah, I am also well Alhamdulillah. Today I am really happy to participate in the fifth week of Steemit Learning Challenge Season 30. This week I will be participating in the "SLC S-30-W5// "Traditional Steam Cooking- Khaman Dhokla (Gram Flour Cake)"" competition organized by the respected teacher @jyoti-thelight madam, thank you very much for organizing this great competition. So let's get started...!
𝙏𝙝𝙪𝙢𝙗𝙣𝙖𝙞𝙡 𝙞𝙢𝙖𝙜𝙚

✅ 1. What dishes do you prepare in your region using gram flour? Are any of them cooked by steaming?(2 Marks)
Uses of gram flour in our region of Bangladesh:
- In our Bangladesh, gram flour is mainly used to make delicious fried dishes. Especially during the holy month of Ramadan, gram flour is essential in making potato chops, biguni, piyaju and burinda as the main accompaniment of Iftar. Apart from this, gram flour chutney or bada is quite popular for various types of vegetable pakoras and afternoon snacks.
Steamed dishes:
- Usually, most of the dishes made with gram flour in our country are fried in oil. However, due to health awareness, 'Khaman Dhokla' or gram flour steamed pitha inspired by Gujarati food has also found a place in our home cooking. Since it is made completely steamed, it is currently known as a very popular healthy steamed dish in our region.

✅ 2. Make the "Khaman Dhokla (Gram Flour Cake)" or any similar dish that are shared in the course, or make them as per your style, with a detailed step-by-step procedure along with images. (5 Marks)
All the necessary ingredients for making Khaman Dhokla.

| Sugar | 2 tablespoons |
| Turmeric powder | A little (for color) |
| Lemon juice | Juice of 1 lemon |
| Baking soda/in | 1/4 teaspoon |
| Mustard seeds | For boiling |
| Chillies and coriander leaves | For garnish |
| Oil and salt | To taste and as needed |
The process of making (Step-by-Step) Khaman Dhokla (Gram Flour Cake) Recipe"

✔ I first mixed 1/4 teaspoon of baking soda with a small amount of water in a bowl and set it aside, as this will help soften and puff up the dhoka.
✔ At this stage, I took 2 cups of gram flour in a large bowl. Then I added sugar, salt to taste, a little turmeric powder, 1 tsp oil, and lemon juice. Then I added water little by little to make a smooth and thick batter, so that there were no lumps.
✔ Now I greased a round or square container with a little oil. Then I added the gram flour mixture and the soda water and beat it well. After a while, I poured the mixture into the oiled container and set it.
✔ At this stage, I brought a large pot of water to a boil. Then I carefully placed the gram flour container inside the pot. Then I covered it with a lid and steamed it for 10-15 minutes on medium heat.
✔ While the dhokla was cooking, I made a syrup of sugar and water in another vessel. Then, I put a pan on the stove, heated a little oil and fried it with mustard seeds, coriander leaves and green chilies. Once it is fried, mix the sugar syrup in it.
✔ After steaming for 10-15 minutes, I opened the lid, checked the dhoka, took the plate off and let it cool for a while. Then I inverted the plate of gram flour onto another plate and poured the pitha.
✔ Now, take the prepared coating liquid and pour it on the Khaman Dhokla (Besan cake) in different places, then spread it well. Then using a sharp knife, I cut it into small pieces of my desired size. Then, arrange them on a plate and serve with chopped coriander leaves.
