༻꧂Good Evening Steemians ༻꧂

Dear steemians a warm and heartfelt welcome to my blog. I am pretty sure all of you having a refreshing day. I am excited to be part of this cooking challenge. In this challenge I get a chance to explore the traditional and street style flavors. This time I prepared a delightful “Gram Flour Cake,” commonly known as Indian Dhokla. It is a soft, fluffy and steamed dish. Guys it is made from chickpea flour. It is liked for its light texture and delicious taste.

In my city Lahore many delicious traditional dishes are prepared from besan (gram flour). The most popular are the pakodas. They are deep fried with onions, potatoes, spinach etc. It is dipped in a spicy gram flour mixture. Apart from this besan chela is also made which is a kind of savory pancake and looks very delicious. Kadhi pakora is also a popular dish in which besan pakoras are cooked in sour curd gravy.

As far as steamed dishes are concerned. Ghey are less common in our country. However some people also make dhokla. It is steamed and preferred for its soft and light texture. It is especially when people want to try something new or healthy.

The Ingredients Which I Used For This :

༻꧂Make the "Khaman Dhokla (Gram Flour Cake)" or any similar dish that are shared in the course, or make them as per your style, with a detailed step-by-step procedure along with images.༻꧂

5Lemon Two Spoon
6Baking soda Half Spoon
7Curry leave
8Salt One Spoon or As Taste
9Coriander Leaves
10Green Chilli

Step 1!

So guys first I sifted the gram flour (besan) well in a bowl. After that I added a little salt to it. Guys along with a small amount of sugar. Then guys I add a pinch of turmeric powder. Then I add some lemon juice.

Step 2!

Then I added a little water. I started mixing it with a whisk. Since I didn’t use a mixing machine. It was important to mix it really well. So I kept whisking it for about 5 minutes. After mixing it thoroughly. I added baking soda. Then mixed it nicely.

Step 3!

Then after mixing it well. I greased a steel pan properly with oil. When it was nicely greased. I started adding the batter into it.

Step 4!

Then I had already placed a large pan with water on the stove. I left it on high flame to boil. After that I put a strainer inside the pan. When the water started boiling properly. I placed the steel pan with the batter on top of the strainer. Then I covered it and let it cook for about ten to fifteen minutes on medium to high flame. It allowing it to steam.

Step 5!

After ten to fifteen minutes. I checked it. It was fully cooked. I checked it using a toothpick. I inserting it into the batter and then taking it out. When I saw that it came clean. It meant it was perfectly done. If it had been slightly wet. I would have cooked it for a little longer. Guys since it was dry. So it was ready.

Step 6!

Then in another pan. I added a little oil. I placed it on the stove. When it became slightly hot. I added the mustard seeds. I lightly fried them. After adding them. They started making a crackling sound. It indicating that they were frying properly.

Step 7!

Then I added the sliced green chilies. I lightly fried them. After that I also added curry leaves and gave everything a gentle fry.

Then I added fresh coriander (cilantro). I fried it well along with the rest. After frying everything. I added about one cup of water

Then I added sugar and mixed it well. Along with that. I add one spoon of lemon juice. I kept stirring. Until the sugar is completely dissolved.

Step 8!

Then I checked the dhokla. I saw that it had cooled down. I carefully loosened it from the steel pan using a knife. After that I cut it into pieces by making vertical and horizontal cuts. I am forming square shaped pieces. Then I put it into the plate.

Step 9!

Then I started pouring the prepared liquid (liquid mixture) over the cut dhokla. In this way. I evenly added the liquid over all the pieces.

Fluffy, flavorful, and fully ready. This dhokla was all set to impress.
