Intangible Cultural Heritage of Changshu
When a friend comes from afar, I treat them to a bowl of specialty stir-fried noodles with sauce. This is a traditional dish from my hometown, Changshu, and a recognized intangible cultural heritage. I ordered a "Chang Jixing Nine-Grid Noodles" for my friend, while I enjoyed a bowl of yellow croaker noodles myself. I also taught him some noodle-related terms: "Double sauce, extra soup, heavy green onions, no MSG, slightly firm noodles, and pickles on the side." --- This conveys both the flavor of the dish and the cultural nuances in the eating style.
