Always excited sharing my experiences and everyday struggles here with y'all, knowing quite too well, there's someone who's available to read and connect. So talking about today, wanna hope yours was great, well, for me, my today was quite exciting though very stressful, something for another day's discussion, but for today's discussion, let's talk about this delicious coconut rice I made for a client yesterday.

For starters, coconut rice is one of the best meal you'd ever put into your mouth. Not just that it's very delicious, the aroma is out of this world and much inviting. Having returned to Uyo few weeks ago, this client of mine has been on my neck, demanding she needed coconut rice, and not just from any other source, but the one I make myself. Being up and doing basically every day, the opportunity to make this dream of hers come true never did avail itself. So yesterday, the opportunity finally presents itself and we didn't taste any time, but utilize the time we had judiciously.

OUR COOKING RECIPES

Coconut oil (2 pieces upwards depending on the amount of rice you're cooking),
Rice (most people prefer local rice but for this one, I used Uncle Benz Rice),
Proteins (could use eggs, beef, any protein of your choice, for this one, I used fresh fish and liver),
Crayfish (can't afford to overuse this, small quantity please),

Fresh pepper (I always blend mine),
Onions (I always blend mine),
Cubes (to taste),
Salt (to taste),
Sweet corn (optional but I used this)
Carrot (optional but I used this),
Green peas (optional but I used this),
Fresh tomatoes (optional).
So now that all your ingredients is ready, you can prep them for the cooking.

OUR COOKING PROCEDURES

Break the coconut into tiny pieces, blend it or grate it, boil hot water and pour into the blended or grated coconut. Boil your rice (not soft), drained it and set aside. Prep your proteins, for the fish and liver I used, I washed them and then chopped them into tiny pieces, seasoned them and boiled for few minutes, and then fry them. Ensure you've blend your pepper, onions, crayfish and your cubes opened. If using carrots, green peas and sweet corn like I did, wash and chop them then turn the sweet corn from the can into the chopped carrots and green peas. The essence of always prepping before cooking is to ensure easy cooking, and then, prepping before cooking gives you enough time to wash all your ingredients well to avoid having sand in the meal.

Now that all's set, it's time to cook. Turn the drained rice into a cooking pot, pour in the blended pepper, onions and crayfish. Add your cubes and salt, ensure it's in right proportions. Drained the hot water you poured inside the blended or grated coconut mix and pour same into the rice. Ensure the water is not too much more too small, but moderate quantity. Stir the mixture while on ground until everything is mixed together completely before setting it on the heat (this is to avoid over burning). Keep monitoring; the taste, the softness of the rice and the heat.

When the rice is soft and the water has reduced and the rice visibly seen, pour in your chopped carrots, green peas and sweet corn. Cover it and allow it cook under low heat until the water is completely dried up. Now, you can stir the rice completely and bring it down down the heat. This sweet aroma blasting coconut rice is ready to be served.
My client was very excited I through for her and helped satisfied her carving. So make sure, before this week runs out, you've tried this at home with your family.
