Maize, corn whichever you refer it to is one of the grain crops with prominent presence in agriculture. Its impact on food security is as wide as it could get.
It has it season of growth, but through preservation and proper storage process it could be available through the year.
It's planting season usually fall betweemarch to june and by June to September, we enjoy and feast on our harvest.
It's breed includes sweet corn, dent corn, flint corn, waxy corn, baby corn, ornamental corn and some others
Some enjoy it boiled and eating it ordinarily. And another way to eat it boiled is when it is done with beans. Yes, some people eat beans boiled with beans pottage.
Corn is also roasted under low heat or with oven. It is a common local snack around here which could be enjoyed with roasted pears.
Corn/maize is also enjoyed as a pudding. It is prepared with salt, seasonings, pepper and garden eggs optionally.
Some cereals are made from this grain crops. That is when the crop is harvested from a large scale farmland where a lot of the crop could be harvested. Corn flakes is one example; golden is another.
Even when dry, corn is not at waste. Very dry corn grains could be used to feed local fowls.
Dry maize could be taken to the mill and ground to powder or flour. In this state is dry and could be prepared into different local dish. When ground with water on the other hand, it forms paste which is stored under enough water in a container; this paste is prepared into pap which could be taken with sugar, milk and bean cake.
