Shredded Chicken with Lemon
Ingredients: 1 chicken breast, half a carrot, 2 coriander, 1 chilli, 1 spoonful of soy sauce, half a lemon, a little olive oil, a little vine oil, a little sugar, a little more chilli oil for spicy food
Accessories: cooking wine, spring onion, a few peppercorns
Preparation: Thaw the chicken breasts, wash them well, add the chicken to a pot of cold water, add the wine, spring onions and peppercorns, bring to the boil on a high heat, cook for 10 minutes on a medium heat, turn off the heat and simmer for 5 minutes and fish out. Add the shredded carrots, cut the chilli into rings, cut the coriander into small pieces, squeeze the lemon juice and shred the lemon peel. Add the shredded carrot, coriander, chilli, soy sauce, lemon juice, olive oil, pepper oil and a dash of sugar (or not) and toss well to serve.
