Ingredients

1 pound dried navy beans
1 large onion, chopped
4 cloves garlic, minced
3 carrots, chopped
3 stalks celery, chopped
1 ham hock or 2 cups diced ham
4 cups chicken broth
2 cups water
2 teaspoons dried thyme
2 bay leaves
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

Rinse the navy beans in a colander and remove any debris. Soak the beans in a large bowl of water overnight or for at least 8 hours. Drain and rinse the beans before using.

In a large pot or Dutch oven, sauté the chopped onion and minced garlic in a little bit of oil until the onion is translucent.

Add the chopped carrots and celery to the pot and continue to sauté for a few more minutes.

Add the soaked beans, ham hock or diced ham, chicken broth, water, dried thyme, bay leaves, salt, and black pepper to the pot. Stir to combine.

Bring the soup to a boil, then reduce the heat to low and cover the pot. Simmer the soup for 2 to 2 1/2 hours or until the beans are tender and the soup is thickened.

Remove the bay leaves and ham hock from the soup. If you used a ham hock, remove the meat from the bone and add it back to the soup.

Use an immersion blender or transfer a portion of the soup to a blender to puree until smooth. This will give the soup a creamier texture.
Taste the soup and adjust the seasoning if necessary.
Serve the Boston bean soup hot with some crusty bread or crackers. Enjoy!
