Cooking is not only about food, it is also about feelings and patience. When I cook slowly the taste changes and even mood feels better. Today I want to share my simple experience of making chicken curry and what I learned from it.

Yes, I made chicken curry with little simmering. Honestly, it feels little different from normal recipes. When I simmer curry on low flame, time does magic. The chicken cooks slowly and becomes very soft not hard, not dry only juicy inside. In fast cooking, we rush things. Spices stay on surface only. But simmering gives time to spices to go deep in chicken. The gravy becomes thick in natural way. Oil separates slowly not forced. Another big difference is smell. The aroma becomes more deep and warm. Whole kitchen feels calm like something special is cooking. Simmering also saves curry from burning and flavours balance better.

👉Today I am sharing with you very delicious chicken curry recipe. For this recipe I have cut onions into thin slices. I put oil in pan and then I add onions to it. Then I put onions and three large green chilies. I add them just now because it will make flavour of my recipe much more delicious. I fried onions for about five minutes. I fried them for five minutes because I want to turn light brown colour.
👉 After frying the onions the colour of onions had turn brown. Then I took them out onions and green chilies onto a plate. I will tell you what to do with these two things in my next step.
👉 In same pan where I fried onions after removing onions. I add chicken for frying. I wanted to fry the chicken well. After frying it for two to three minutes. I add tablespoon of ginger and garlic paste. After that I fried chicken and ginger garlic paste well on low flame.
👉 While I was frying chicken in time I had. I put onions and green chillies that I had fried well in blender and blended them well. After that I add two large tomatoes to blender and blend them well to make paste. The chicken curry I am making today will be much more delicious with these two pastes.
👉 The chicken was well fried then I add paste of browned onions and green chilies that I had made and mixed it well. After frying onion paste for two to three minutes. I add tomato paste I had made and fried both of these things well with chicken.
👉 Now it my turn to add spices. I did not add any special spices. I make my curry with very simple spice. In this spices I took 1 tablespoon of red chili powder 2 teaspoons of chilli flakes. 1 teaspoon of black pepper and 1 teaspoon of turmeric. According to test I took salt one tablespoon of cumin seeds and I add all these spices to my delicious curry. I add all these spices to chicken and then fried it well.
👉 After frying all spices well with chicken. I took cup of welbeaten curd and added it to it. After mixing it well I cooked this delicious chicken curry well on low flame. After about 10 minutes delicious chicken curry was cooked and ready.

In simmering chicken is cooked on low flame . Just low heat infuse taste from meat and spices and make it more delicious and unique. Its good to know that you have tried it before.
