My Weekly Food Highlight, Take a look! 🥧
Hello friends and fellow food lovers in the Steem Kids & Parents community!
It’s another beautiful week, and I am excited to share the highlights of what has been fueling my body and keeping me happy.
Food is more than just sustenance; for me, it’s about culture, comfort, and what the family decides to enjoy together. Here is a look at my menu for the week!
1. Rice and Beans with Fried Meat
The Meal: A local combination of boiled Rice and Beans, served with a piece of fried meat.
Predominant Ingredients:
- White rice,
- brown beans,
- palm oil,
- fresh meat
Day Eaten: Friday.
Why I chose this: This is a "power meal" in my home. We decided on this because we wanted something filling that combines protein and carbs perfectly. The meat was the star of the show, adding that extra crunch and flavor!
2. White Pap (Akamu) with Fried Plantain and sauce
The Meal: Smooth, hot White Pap served with a side of sweet Fried Plantains (Dodo) and a spicy tomato-based sauce.
Predominant Ingredients:
- Corn starch (for the pap)
- milk and sugar
- ripe plantains
- tomatoes
- peppers and onions.
Day Eaten: Saturday Morning.
Why I chose this: Saturday mornings are for relaxing. My cravings for something sweet and soft led us to fry some ripe plantains. The pap is very light on the stomach but keeps you satisfied until a late lunch.
3. Garri (Eba) and Egusi Soup
The Meal: Yellow Garri (Eba) paired with a rich, textured Egusi soup.
Predominant Ingredients:
- Melon seeds (Egusi)
- leafy vegetables (Bitter leaf)
- palm oil
- fermented cassava (Garri).
Day Eaten: Sunday.
Why I chose this: Is some how difficult to go through a Nigerian week without a proper "swallow" meal! This was a family decision. Egusi is a cultural favorite that brings everyone to the table, and it’s one of the best ways to enjoy our local vegetables.
4. Boiled Coco-yam with Local Palm Oil Dip
The Meal: Traditional boiled Coco-yam served with a spicy palm oil and "Ogirisi" or local spice dip.
Predominant Ingredients:
- Fresh Coco-yam
- red palm oil
- salt
- ground chili peppers
- saint leaf
Day Eaten: Monday.
Why I chose this: This meal was driven by finance and availability. Coco-yam is currently in season and very affordable, but this particular one I ate was harvested from our farm. It’s a very traditional, "earthy" meal that reminds me of our heritage. It’s simple, healthy, and very easy to prepare.
This week, my food choices were a mix of family tradition and seasonal availability. While we love our rice and swallow, we also try to eat what is fresh in the market (like the coco-yam) to save on costs while staying healthy.
I humbly invite my friends @crismenia, @bossj23 and @joshpa to join this contest!
Thank you, mummy @ngoenyi, for organizing this delicious contest!
