All in one contest, Food challenge: Baked potatoes with chicken
Hello, my dear Steemians, I am so excited to be part of this contest, and I will be sharing one of my favourite recipes that I cooked today.
What made me crave baked potatoes today? |

It's the weekend, and the first thing that I wake up craving for today is baked potatoes with chicken.
Baked potatoes are one of my favourite meals that I love not only are they delicious, but they're healthy also.
And it's that food that's easy and simple to make it doesn't take hours before all the preparations are done and ready.
How did I prepare it step by step ? |

Since it's a baked potato with chicken, the first step is to get all the spices I will be using.
I brought out a bowl, and I added:
- 1 spoon of chilli powder
- 1 spoon of paprika
- 1 spoon of garlic powder
- 1 spoon of black pepper
- ½ spoon of rosemary
- ½ spoon of onion powder
- ½ spoon of coriander
- Salt to taste
- And any seasoning cube of your choice
I mix everything thoroughly in the bowl. Then I brought out my chicken. I made use of chicken legs, and I used some of the spices to marinate it well.
Then I put it aside to marinate for 1 hr. You can do this a day before if you want, you can marinate it for 24 hrs and put it inside the fridge. But I have no time for that, so I only let it marinate for 1 hr.
After that, I cut my potatoes. I made use of Irish potatoes and sweet potatoes. The reason I made use of two kinds of potatoes is because the Irish potatoes I have here with me are not sweet like the normal potatoes we all know, so I added the sweet potatoes to it so it can give me that potato taste.
So I cut my potatoes into cubes, not too big and not too small.
Then I moved to my veggies:
- Green bell pepper
- Yellow bell pepper
- Red bell pepper
- Carrots
- Onions
- Parsley leaves
I cut all the veggies into the sizes that I want. After that I pour all the veggies that I have cut into the big bowl of potatoes that has been cut into cubes, and I mix them together with my clean hands.
After I am done, I added the remaining spices that I use to marinate my chicken, and I mixed it thoroughly with the veggies and potatoes and with just 1 spoon of olive oil.
I marinate everything well. After that, I brought out my baking pan, I added all the mixed potatoes with veggies inside the pan, and I added my marinated chicken to it too.
I arrange it well, then I cover everything with foil paper, and I put it inside my heated oven of 200°C on cooking mode. It takes up to 45 to 50 minutes to be well cooked. After it was well cooked, I brought it out, removed the foil paper, and put it back inside the oven to grill under 150°C for, like, 20 to 25 minutes.
Then, after it was well baked to my satisfaction, I brought it out, dished my plate, and was ready to devour it.
And I can say for a fact that it tastes so delicious, and I absolutely love it.

It came out even better than I imagined the taste was everything and more. The spices did a good job 😂. The chicken was flavourful and juicy, and the potatoes were so soft.
It was so delicious that I didn't know when I cleared out my plate; I really love it. If you love simple, tasty foods, you should try cooking this recipe at home. You will surely thank me later.
