Ekpang Nkukwo

This dish is known as Ekpang Nkukwo and it is a native dish originally from the tribe AkwaCross which is the South-South region of Nigeria and it's enjoyed across other tribes.

Ingredients For Ekpang Nkukwo

  • Cocoyam

  • Wateryam

  • Scent leaf

  • Periwinkle

  • Palm oil

  • Pepper/onions

  • Dried fish

  • Crayfish

  • Seasoning cubes/salt

  • Cow hide(ponmo)

  • Cocoyam leaf


Processes of the preparation

  • The first thing done is peel the cocoyam and wateryam and put inside basin of warm water.

  • Go ahead to use grate and grate the cocoyam and wateryam.

  • Wash the periwinkle, pound/grate crayfish, wash the dried fish in hot water, wash and cut the scent leaf, cut the onions, wash the cocoyam leaf too.

  • The cocoyam leaf will be used to wrap a small portion of the grated mixture.

  • In an empty put, add the palm oil as the base of the food. Spread the periwinkle in the pot and place the wrapped food inside the pot. Wrap all and place in there.

  • Add boiled water to the pot and allow to cool to make the wrap hard, not to spread. Then add the crayfish, onions, seasoning cubes, salt and dried fish to it and allow it cook.

  • Lastly, add the scent leaf and stir and thats all.

  • It's good for maintaining healthy immune system.

  • It controls blood sugar level.

  • Ekpang Nkukwo reduces cholesterol level in the body.

  • It aids digestion in the body.

  • It is rich in carbohydrate.

  • Cocoyam contains magnesium and vitamin.


When the food is often eaten(whether breakfast, lunch or dinner or all)

Ekpang Nkukwo is actually a heavy meal, it can be eaten at anytime of the day. As people have different preferences to things. I enjoy it at any time of the day but mostly as dinner.
