Hope you guys are all fine, and how is the preparation for Christmas going? Please join me as I prepare my delicious catfish or fresh fish stew.

Ingredients

  • Catfish
  • Fresh tomatoes
  • Scotch bonnet (Habanero)
  • Bawa (shombo)
  • Onions
  • Ginger
  • Garlic
  • Curry powder
  • Thyme powder
  • Maggie
  • Salt
  • Groundnut oil

Step 1 I started by washing my catfish using warm water with plenty salt, the reason is to remove the slime from the fish quickly, after that I proceeded to cleaning my scotch bonnet, onion, garlic and ginger and then grinded everything together using a hand grinder, then I added my seasoning cubes, salt, Curry, thyme and a table spoon of groundnut oil mixed and marinated my fish.

Step 2 After that I made sure my ingredients got into the fish properly by leaving it to marinate for almost an hour and more, with a cover covering it, next up I washed my tomatoes, onions, ginger, bawa, and scotch bonnet then went to grind them, A few minutes later my neighbor finished grinding my tomatoes.

Step 3 Next up, I poured my grinding tomatoes into a pot and put it on fire to dry up the excess water, it was on fire for a very long time because the water in it was much, after taking more than an hour and some minutes, I checked on my tomatoes and it has dried up, so I placed a pot on fire and added groundnut oil and some chopped garlic with onion and stirred, then added my tomatoes and allowed to fry.

Step 4 After allowing my tomatoes to fry for some minutes, I then added my Curry powder and thyme, then stirred them up gently. I also made sure that my tomatoes were frying on a low heat. It didn't take long; after a few minutes, it was ready.

Step 5 At this point my tomatoes were ready, so I added some amount of water, seasoning cubes, and salt to taste, and also allowed it to boil for a few minutes because I wanted the oil to be on top of the stew, but I guess the oil I put from the beginning was too little.

Step 6 When I noticed that it has boiled for long and the oil wasn't coming up, I just decided to add in my marinated fish and stirred it gently and after that I covered the pot to cook for about 5 minutes then added in the sliced spring onions and stirred gently again so that my fish would not get scattered and then I covered the pot to cook for about a minute and after that my delicious fresh fish stew was ready.
