Here’s the recipe for my Nigerian catfish stew, just as I promised.
It wasn’t easy to write out every step, so I’d really appreciate it if you show some love for the effort. Let’s get started
Step 1: Wash the Catfish
Wash the catfish thoroughly with hot water and salt to remove the slime and sticky residue.
Rinse it with cold water about 3 times until it’s clean and ready to use.
Step 2: Marinate the Fish Transfer the fish into a flat bowl and make a few cuts on it so the spices can soak in. For the marinade, I used: 1. Curry powder 2. Thyme 3. Fish spice 4. Ginger and garlic powder 5. Seasoning cubes 6. Salt
Rub all the ingredients gently onto the fish.
Step 3: Parboil the Fish Let the fish marinate for 15–20 minutes. Then put it in a clean pot, add a little water, and cook on low heat for about 5 minutes. The goal is not to overcook it here, so it doesn’t break apart when you add it to the stew.
Step 4: Prepare the Stew Base For the stew, you’ll need: 1. Fresh tomatoes 2. Red bell peppers 3. Fresh paprika 4. Onions 5. Fresh garlic and ginger 6. Scotch bonnet pepper 7. Tomato paste or ketchup
Blend everything together and set it aside.
Step 5: Cook the Stew Pour the blended tomato mixture into a pot and boil until most of the water evaporates. Add a little vegetable oil and sliced onions. Sauté the onions, then add the tomato mix and ketchup. Fry for about 20 minutes.
Add the fish stock from Step 3, a little water, and season with curry, thyme, seasoning cubes, salt, and any other spices you like. Cover and cook for 20–25 minutes until you see oil floating on the surface of the stew.
Step 6: Finish the Dish Gently add the catfish into the stew and cook for another 3–5 minutes. That’s it you’re done
You can serve this delicious stew with boiled rice, yam, or spaghetti.
