Eggplant - a versatile meal

Have you ever had an eggplant meal before?
Did you love the taste? Do you know how to prepare?

Also if you didn't even know it is edible and haven't heard or taste it before. No need to be curious again, I'm here to help.

Eggplant is very rich in fiber and it is low in calories. It can be eaten alongside other meals.That makes it a special meal too😃

Now let me tell you how I prepared mine.

Preparation of eggplant sauce

First step: Getting the eggplant ready

  • Get your eggplant from your farm or the market

  • Peel off the skin, same way you do to orange or potato

  • Wash it clean and put in pot, add water and cook until it is soft

  • Drain the water, put the cooked soft eggplant into a blender, blend till smooth. You can use mortar and pestle if no blender. Don't worry about the seeds

  • After that put your master ingredient aside

Step two: Cooking your sauce

Your master ingredient is ready now. For this recipe, you'll need palm oil, seasonings (bouillon cubes, salt, pepper and any other seasonings you want to use) onions, garlic, fish stock (or any other of your choice) and don't forget vegetables, it could be scent leaves, curry or green leaves, even potatoes leaves. In my own I used scent leaves and potato leaves.

  • Add palm oil in your pot. Fry onions and garlic, add bouillon cubes, pepper and salt as well

  • Turn for a while, pour in your smooth eggplant. Turn it until it mixes well with the base

  • Pour in your stock, no extra water is needed

  • Let it cook for a little while, then add your sliced vegetables stir until it mixes well

  • Now your eggplant sauce is ready to be devoured 😁

Step 3: Eat with...

Since it is a sauce, you can eat it with rice, yam, potato or plantain.

Mine I ate it with plantain. It was so nutritious.
