Eggs And Sausages With Homemade Tomato Sauce And Potatoes - Tutorial

One of the things I've inherited from my ancestors is a collection of recipes. Before you think of a bookcase of fancy recipe books, let me tell you that's not the case.

I grew up eating home cooked meals all my life as life was tough , food was rationed and scarce all the time. During those days the only way of surviving was cooking at home.

I still remember those dishes and love them today. In my family everyone can cook, which is a very good thing. When you can make your own food, you can watch over what you're eating, which is not only rewarding financially (much more cheaper) but healthy as well. Growing your own food is even better if you have the possibility.

Played By The Ear

I've learned to cook quite late as I've been buy studying and working and thus many of the dishes and recipes I had to reconstruct from memory as there was no one I could ask for guidance.

Reconstructing recipes in this case means I had to cook a dish based only on my memories. I knew how it had to taste and had to figure out the ingredients and spices to get there. It has been a fun game what can I say but at least now I have a bunch of recipes from my childhood, one of which is this one.

It's a dish my grandmother used to cook for us and we loved it. It is tied to her and her memory and everyone loves it.

Ingredients

  • 600g sausage,
  • 500g potatoes,
  • 6 free range eggs,
  • 3 bay leaves,
  • tomato sauce or juice,
  • 3tbsp all purpose flour,
  • salt,
  • pepper,
  • 2tbsp olive oil.

Method

Cut the sausages, add olive oil to a frying pen, add the sausages and while steering, let cook till they are golden brown, 5 or so minutes. Add water to cover, cover with a lid and cook till it's tender. In the meantime cook the eggs.

Options

As some of you know, I'm using my own tomato sauce made of homegrown tomatoes, that is already made with some vegetables and spices. It's the best thing to do if you want healthy ingredients. I know not many can have that, so I'm giving you a few options here.

  1. Tomato Juice - If you're using tomato juice, make sure you use more flour so you get a proper sauce. Mix the tomato juice with the flour, add to the sausages and cook for 10 minutes.

  2. Chopped Tomatoes - These are also excellent for the job. Add the tomatoes to the sausages, let cook till it becomes a sauce. Mix the flour with water to get a sauce, add to the mix and let cook for 10 minutes.

You can use any spice and herbs you like. Bay leaf, dill, parsley, tarragon, oregano, whatever you prefer.

Season with salt and peeper.

When the sauce is ready, add the egg.

You can serve it with mashed potatoes, simple boiled potatoes, rice or toast.

The Reason

The reason I'm sharing this recipe is to try to convince you how easy it is to cook at home. The covid-19 pandemic has made quite a few people's life much more harder. Those who are used to ordering every day from takeaways, restaurants, fast food shops, were put in a difficult position as many if not all of those needed to close. It's quite easy to cook at home and rewarding as well. Try it out, you won't regret it, I can guarantee that.
