Low budget meals - Rice served with avocado and fried plantains

It is known that Venezuela is having a very difficult economy, we have plenty of food, meats of all kinds, vegetables, fruits, fishes of all kind etc, the problem is that they are sold at a very high price. Not everyone earn enough money to live as they want. We have to make things work for our families. If you buy medicines you don't buy clothes or shoes or viceversa.

The dollar rises everyday and that affects the prices of goods because they go up everyday too. Many people are affected with these critical circumstances. I have decided to cook at home within a low budgeted shopping, so that I can save money for things that are important too.

I am dedicating this meal to those families that have a broken pocket at this moment. It is a very delious meal and above all it is very nutritive. It is good for vegans and for vegetarian. For vegans don't add the eggs:

Ingredients:

  • 3 cups of rice
  • 1 big carrot grated
  • 1 cup of parsley chopped
  • 4 garlics
  • 4 chillies chopped
  • chives
  • olive oil
  • 1/2 teaspoon of chinese salt, optional
  • salt at taste
  • 6 cups of water

Preparation:

  • Fry the chives, chillies, and garlics in enough olive oil

  • add the rice, parsley and carrots
  • add water, chinese salt and salt at taste
  • cook until the water dries and cover
  • cook at low fire for about 20 minutes

  • serve hot with avocados and fried plantains
