Khaman Dhokla
Hello friends,
Today I came to share with you a famous Gujarat (India) delicacy "Khaman Dhokla". Dhokla is a vegetarian culinary dish that found mainly in indian state Gujarat. 'Dukkia', a pulse based precursor of the Dhokla,is mentioned in 'Jain' text dated to 1066CE. The earliest extant work to mention the word 'Dhokla' is the Gujarati Varanaka Samuchaya (1520CE).
Ingredients:-
For Batter:-
1.Gram Flour- 1.5 cups.
2. Semolina -1.5 tbsp.
3. Ginger-1inch(paste).
4. Green chilies-2(paste).
5. Turmeric powder- 2pinch.
6. Asafetida- 1/3tsp.
7. Salt-To taste.
8. Eno fruit salt- 2 tsp.(take normal Eno without fruit flavor).
9. Lime juice-1 tsp.
10. Yogurt- 1/4 cup.
11. Sugar- 2 tsp.
For Tempering:-
1. Oil- 2tbsp.
2. Mustard seeds- 1tsp.
3. White sesame- 1-1/2tsp.
4. Cumin seeds-1/2 tsp.
5. Lime juice-1 tsp.
6. Green chilies- 4-5(whole)
7.sugar-2 tsp.
For Garnishing:-
1. Coriander leaves- 2tbsp(chopped).
2. Grated coconut- 3tbsp.
Preparation Method:-
Step 1- Add water in a steamer pan( water quantity depend on steamer size) I used 3 cups of water. Bring water to boil in low flame.
Step 2- While water is boiling, let's make batter of Dhokla. Grease a steamer pan with 1 tsp oil.
Step 3- Take a bowl add gram flour, Turmeric powder, Asafetida,lime juice (2tsp), yogurt, salt,sugar(2tsp), ginger paste,green chili paste. Combine well by adding little by little water.
Step 4- Now add semolina into the batter and stir well until getting a smooth thick batter without any lumps. The batter should be thick yet flowing. ( If batter become thin, then add 1-2 tsp more semolina).
Step 5- Next add ENO(2tsp) and stir briskly and quickly so that Eno or fruit salt mixed evenly (this is very important part to get the proper texture of Dhokla).
Step 6- The batter would froth and become bubbly So you have to be quick.
Step 7- Now pour the batter in the greased pan. Place the pan in a steamer. Steam for 15-17 minutes on medium to high flame or untill toothpick has comes clean.
Step 8- Once toothpick comes clean,with the help of a butter knife gently slid along the edges. Keep a plate on the top of the pan and invert it. The Dhokla will easily get inverted on the plate. Slice Dhokla and keep aside.
Step 9- In a small pan (tarka pan), heat oil(2tbsp). Now add mustard seeds and allow them to crackle. Then add cumin seeds,curry leaves,sesame seeds stir till sesame seeds slightly change its color.
Step 10- Now add about 1/2 cup of water,green chilies ,sugar(2tsp) stir well. Bring this mixture to boil.
Step 11- Pour this tempering mixture evenly on "Khaman Dhokla". Garnish with chopped coriander leaves,grated coconut.
Step 12- Now Khaman Dhokla is ready to eat.😊
