Carrot salad with fennel for a healthy breakfast

Today I decided to have a very healthy breakfast with salad, eggs and some carbohydrates to start the day full of energy. People believe eggs are not very good for health because they increase the cholesterol, but eggs in fact help to reduce triglycerides that is sugar in the blood. Healthy people can eat 3 eggs daily, and not too healthy can eat abou 6 eggs in the week.

Eggs affect people depending in the health conditions they have. Eggs are rich in minerals necessary for a better health. They contain lutein and zeaxanthin antioxidants which play an important role in eye diseases. They contain selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper. They contain vitamins A, D, E and K and lecithin, and they are considered the richest food of the planet.

This salad of carrots with fennel will elevate your defences. It is delicious and tasteful, and it is a mine of nutrients. Sometimes we complicate our lives when we decide for food. The easiest meals are the most nutritive and place the body in a better position to fight against diseases.

To make this salad you need:

  • 3 small carrots
  • 1 or 2 fennel bulbs
  • 1/2 onion
  • 1 red pepper
  • 1 tablespoon of olive oil
  • 2 spoons of vinegar
  • 2 tablespoons of mayonnaise
  • salt at taste

Preparation:

  • wash all the vegetables
  • dry them with a clean cloth
  • grate them
  • add the mayonnaise, olive oil, vinegar and salt at taste
  • mix it with a wooden or plastic spoon
  • cool it to eat

  • serve it with boiled eggs and in my case with venezuelan arepas, but with wholemeal bread will be ok

Comer huevos re asegura una mejor condición física especialmente para los niños que necesitan comenzar desde pequeños a edificar un cuerpo sano y fuerte y los más entrados en edad les ayuda a mantener el azúcar alejada ya que son muy ricos en proteinas. Eso si se deben comer de acuerdo a las condiciones físicas de cada quién. S i sufres del corazón debes preguntar al Doctor.
