Preparation of roasted guinea fowl.
The health of everyone is so important to the human body. We are exactly what we eat. And so this makes food a very important item that needs attention and careful treatment inasmuch as it has a significant role to play in our body. Today l share with you a moment spent with my colleague families over some days in the Upper West Region of Ghana. This happened when we have gifted some guinea fowls by the leaders of a community we served as a young youth working for the community. The team was mainly men with only one woman in our midst. We still decided to get this meal made in our own way, just as young men would always do.
And so we got the various materials needed from the community to start the preparation of this feast. The joy that filled our hearts that day was so enormous simply because we had been given about six(6) guinea fowls to consume before our exit. That means those given fowls were to be consumed that very night before the next morning when we were prepared to leave the community. It was just about roasting the guinea fowls to get them eaten just alone since we had limited time to depart from the place.
Preparation

With the help of the lady among us, we got some basic materials and ingredients that were needed to help us prepare this meal. And so she got into the various house that was closer to manage in finding us some items. Among the few items that were assembled for the preparation of our meal were;
- coal pot
- charcoal
- two utensils and a
- knife
- wire mesh.
The fowls were made ready and slaughtered by one among us who was good in handling that. We thought we could not consume all since it appears so much for us. The following ingredients were made readily available by the only lady among us who bought them from a nearby shop. The very ones that were needed could not be available and so we simply managed with the available ones for our use.

- a sachet of spices
since the food we are preparing didn't need so many items to make it good, we obviously made use of the above ingredients to get what we looked for. A roasted fowl was not something that required so much. And as seen, the meal was prepared by myself with the help of the other guys. Going it the men way was simple. When men cook here in my locality, it is simple, fast, and stress-free. Unlike women who take a long time in preparing a very simple meal.

In doing this, you simply have to ensure your fowl cut into the preferred sizes after slaughtering. And so the our killed fowls were arranged into good sizes giving us a good number of pieces all into one of the utensils. Meanwhile, you have to get your fire set to be it a gas cylinder or whichever way. We got charcoal and a coal pot and so that was how l got this made that day. Simply get the meats well washed some amount of added water into a saucepan and be put on the fire. While on the fire, add some amount of salt and get them garnished with the available spices or seasoning for your use. This should not be more than 20minutes on the fire. After a considerable time, this was taken off the fire and the powdered pepper made ready by now. At this stage, you only need to take out the semi-cooked meat and then put it into a bowl or something different which has the powdered pepper.
As seen in this image, the powdered pepper is garnished or wrapped with each piece of the cooked fowl or meat. Once this is done, you ensure the fire is in very good condition with the metallic mesh on the top of the fire. I had my mesh placed on the coal pot of fire in a good condition to roast the fowls or cooked meat.

The meat or cooked fowls must now be displayed on the fire of mesh on the coal pot or whichever means you use. This stage requires full attention and careful treatment of what you have on the fire. By now, we knew we are almost through and done with the meal. All you need to do is ensure the meat on the fire is well arranged and control to ensure the fire not making them so bad. And this was when my colleagues were all gathered around the fire even as we continue to get the meat roasted this time. This session of the process shouldn't take more than 15 minutes for each meal to be ready since it has already been cooked.

Simply take off the meat from the fire once you noticed it is okay at this moment. And this is where our fun began. We have enough meat for the night even much more than we thought. That night was so memorable that l never would get it forgotten. That was my first time having guinea fowl tasted. Doing this meal the men way was pretty fast and simple for us all. You may try with any meat in your local setting. Roasting of the meal isn't difficult among the food preparation. Getting back home from this place was more than painful. It was a nice time to have such a feast together.
