MONDAY IN A POT ...COOK WITH ME
Today was all about comfort food.
Yam + plantain porridge cooked low and slow with kpomo, dry fish, red oil, pepper, onions and all the good seasonings.
I started by letting the kpomo and dry fish build flavor first, then added yam cubes, plantain slices, and poured in that golden red oil. The kitchen started smelling like "Sunday lunch at mama's house" 😂
Let it simmer, mashed it a bit for that soft texture, then plated it with a side of sautéed greens for balance.
From washing the yam, to the bubbling pot, to this final plate... every step was worth it.
It’s peppery, soft, a little oily, and tastes like home.
This is the kind of meal that makes you pause, thank God, and go for a second plate 🙏
