Through your post, I learned a lot about the traditional Nigerian street food, Massa. You have beautifully explained the steps from soaking the rice to the fermentation process and then preparing it in that special pan. The images clearly showed how soft and delicious the food looks. In our area, we have a similar food called Chitoi Pitha, which tastes amazing with bharta. The taste of eating this Chitoi Pitha with Bharta is amazing. I really enjoyed how you highlighted the tradition and love for local street food in your writing. Thank you for sharing this unique food experience.
