This time I want to tell you about a delicious pastry called MERENGUE.

Meringue is a whipped cream made from eggs and sugar, which are dissolved in a double boiler.

How to achieve a perfect meringue?

Achieving a perfect meringue is the headache of many pastry chefs, meringue is one of the most delicate preparations to prepare in confectionery is meringue, which although it seems easy to do it is not. The truth is that achieving a perfect meringue requires certain tips, so that we can obtain a perfect, bright and stable mixture. In this post I want to explain what those tips are, which you must follow, so that you can achieve it.

Did you know that within the pastry world there are three types of meringues?

All these three meringues have egg whites as their main ingredients.

These are:
1- Swiss meringue: Its main characteristic is that the sugar is dissolved together with the whites in a water bath.
2- French meringue: Is the most basic and the whites are beaten and then the sugar is added in the form of rain.
3- Italian meringue: It is made by adding a syrup that should be at 120 ° C, to the whites previously beaten.

These are the steps you MUST NOT SKIP, if you want to achieve a perfect meringue:

The meringue is basic an airy cream, which is used to decorate desserts.

❌ The meringue is the enemy of fat and water, if when making your meringue the utensils or bowl are wet or dirty, the meringue will not rise.❌

🍰 It is for this reason that all utensils should be cleaned with vinegar or lemon that will have direct contact with the mixture.

🍰 It is advisable to use very fine grain sugar, for its easy dissolution.
You should always use twice as much sugar compared to whites.

🍰 To obtain a fairly firm and stable meringue, add a few drops of vinegar, lemon or cream of tartar.

🍰 Weigh the ingredients, accuracy is key remember that in baking the ingredients must be exact for best results.

🍰 Begin beating at minimum speed and then increase the speed, then beat until the bowl is completely cold.

You just have to follow the instructions to the letter and you will get an incredible result, a super shiny, silky and delicious meringue.

And now the funniest part of the process: decorating the desserts. You will know that your Merengue is in the perfect spot, when it makes peaks like the one in the photo.
